Meat Cutter

Harvest Floor

Skinning lamb carcasses
Skinning lamb heads
Hide pulling
Gut table operation
Trimming contamination off of lamb carcasses
Trimming lamb hides
Recovery of lamb bi-products
Operation of saws, air knives, hock cutters and other power tools

Production Floor

Preparing lamb carcasses for production
Breaking carcasses for primal cuts
Trimming and boning lamb shoulders
Trimming lamb racks or lamb loins
Trimming shanks, necks and briskets
Trimming flanks or sirloins
Trimming other lamb pieces

Requirements

Must have a minimum of 1-year of previous experience working in a meat processing plant or Butcher experience.
No Education is required.

Punctual and reliable
Physically fit (able to lift 50 lbs)
Enjoy working on a team
